How do you wind a watch pocket?

I think buying a vintage pocket watch, but I do not really know much about wind properly. I read that you remove the winding stem, and then twist it until it is fairly hard. Does just about everything there is to this? I hate to ruin a beautiful piece of vintage watches. One thing I do not get is, do you have to reset the clock every day then? How long the clock running as soon as the wound? Thank you
